Snack Time: Quick n’ Easy Energy Bites

I’ve been in the kitchen experimenting with fun recipes lately. Pinterest may have something to do with this newly found obsession, but nevertheless, I wanted to share a healthy recipe I conjured up using simple ingredients.

These oatmeal energy bites are a cinch to whip up, and they make a great addition to your lunch bag. I often have one as a pre-run snack, as it lends the perfect amount of carbs (oh, how I love carbs!) to fuel me through a workout. The best part? You can simply pop one into your mouth—no cutting, plating or utensils required!

I’m the kind of cook who likes things to be simple and fuss free. Of course, blending, simmering and putting my “techniques” to the test is always fun, but sometimes you just want to make something in ten minutes or less. The ultimate kitchen #win is when a recipe requires only one bowl, a few measuring utensils, and a mixing spoon.

Now, it’s time to roll up your sleeves and get mixing!

Ingredients

  • 1 cup oats
  • 1/2 cup ground flax seed
  • 3 tbsp chia seeds
  • 3 tbsp raw sunflower seeds
  • 1/2 cup dried cranberries (or dried fruit of your choice)
  • 1/3 cup honey
  • 1/2 cup almond butter (or a nut butter of your choice)
  • 1 tsp vanilla extract

Instructions

  1. Place all ingredients in a large bowl and mix until the oats are no longer dry and everything is combined.
  2. Roll into small balls (or pop ‘em into your mouth!).

TIP: You can mix in as many sweet add-ins as you like. Some of my favourites include: chocolate chips, shredded coconut, raisins, pumpkin seeds, sunflower seeds…The list goes on!

These bites will store well in an air-tight container for up to a week, though they are usually gone in my household within a few days! Bon appetite!
